Chop 200g of dates and place in a bowl.

Add ¾ teaspoon of baking soda and 120ml of hot water to the dates, mix well and set aside.

In a separate bowl, whisk together 75g of butter and 100g of brown sugar for 2-3 minutes.

Add 3 medium eggs to the butter and sugar mixture and whisk for 1 minute.

Mix in 200g of plain flour and 1 teaspoon of baking powder gently.

Add 1 teaspoon of vanilla extract and ½ teaspoon of almond essence (optional) to the mixture.

Pour the batter into the baking pan and bake in a preheated oven at 170°C (338°F) for 30-35 minutes.

In a microwave, combine 100g of butter and 100g of brown sugar, microwave for 45 seconds, and mix well to create the toffee sauce.
