Thinly slice 2 medium onions or finely dice them for quicker cooking.
Thinly slice 3 green onions, separating the whites from the greens.
In a container, mix 1 cup of water, 4 tbsps of soy sauce, 4 tbsps of mirin, 0.5 tbsp sugar, 1 tsp chicken boung powder, and 0.5 tsp hondashi.
In a large pot or pan, heat 1 tbsp of oil over medium-high heat.
Add 1 lb of ground beef, spreading it out evenly, and let it sear for 1 to 2 minutes until golden brown.
Flip the beef and sauté for 3 minutes or until most of the liquid has evaporated.
If there's too much fat, use paper towels to remove some.
Add the white parts of the green onions and sliced onions, sautéing for about 5 minutes until softened and translucent.
Pour in the prepared sauce, stirring and scraping the bottom of the pot to deglaze.
Once the sauce starts to boil, reduce the heat to medium-low, cover, and let it simmer for about 5 minutes.
To serve, place some rice in a bowl and top with the beef and onions, being careful not to add too much sauce.
Top with a fried egg or a soft boiled egg, adding 1 to 2 tablespoons of broth if desired.
Finish with pickled ginger and the green parts of the green onions.
