2 teaspoons vanilla extract

3 cups day-old bread (cut into small cubes)
½ cup raisins (and/or sultanas)
⅓ cup salted butter (room-temperature or melted)
4 tablespoons salted butter (for greasing the pan)
½ cup brown sugar (for dusting pan)

Mix the eggs with half a cup of milk, strain to remove undissolved parts, and set aside.

In a pot, mix the remaining milk with vanilla, cinnamon, ginger, cloves, salt, and sugar. Heat over low heat, then add the bread and raisins, stirring until soaked. Add butter and stir until melted. Remove from heat.

Combine the soaked bread mixture with the egg mixture and stir quickly until well combined. Set aside.

Grease a 6-cup baking pan with butter and sprinkle with sugar. Pour the bread mixture into the pan without disturbing the sugar coating. Preheat the oven to 400°F (200°C).
