Add the cut bread to the egg and milk mixture.
Mix in the raisins and lemon zest.
Ensure the mixture is moist; add more milk if necessary.
Pour the bread mixture into the baking dish.
Cover the baking dish with aluminum foil.
Prepare a second pan with water for a water bath.
Preheat the oven to 370°F.
Place the baking dish in the oven and bake for 1 hour.
