Vegan Chili

1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 cup fire roasted corn
1 can (15 oz) fire roasted tomatoes
1 tsp smoked paprika
1 cup cauliflower meat-like crumbles
1 can (15 oz) canned lentils, drained and rinsed
2 cups vegetable broth
1 tsp cumin
2 tbsp chili powder
1 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
1 can (15 oz) canned beans (white beans, black beans), drained and rinsed
2 tbsp tomato paste
Fresh cilantro for garnish
1 tbsp maple syrup

Put onions in a pan and let them soften.

Add garlic to the softened onions.

Chop a red pepper and add it to the pot.

Add fire roasted corn and fire roasted tomatoes to the pot.
