2 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
1 lb Beyond Meat
1/2 tsp sea salt
2 tbsp chili powder
1 tsp cumin
1/4 tsp cayenne pepper (optional)
1 tsp oregano
1/2 tsp cinnamon
1 can (15 oz) diced tomatoes
1 can (15 oz) cooked kidney beans, drained and rinsed
2 cups vegetable broth
2 tbsp tomato paste
1 cup Follow Your Heart cheddar shreds
1/2 cup vegan guacamole
1 jalapeno, diced

Add a little bit of oil to the bottom of a large pot and warm it.

Add chopped onions and finely minced garlic to the pot and saute for 2-3 minutes until translucent.

Add Beyond Meat and chop it up finely using a spatula, cooking for about 4-7 minutes.

Add seasonings: sea salt, chili powder, cumin, cayenne pepper, oregano, and a pinch of cinnamon, mixing until the Beyond Meat is coated.

Add diced tomatoes and mix well for about 2-3 minutes.

Add cooked kidney beans, vegetable broth, and tomato paste, mixing everything well.

Cover and cook for 20 minutes, then remove the lid and stir, cooking longer if a thicker consistency is desired.
