Vegan Chili

2 10 oz bags of Beyond Meat crumbles
2 stalks of celery
1 green bell pepper
1 red bell pepper
1 jalapeno pepper
1 small onion
4 cloves of garlic
2 tablespoons of olive oil
2 14 oz cans of diced tomatoes
1 14 oz can of stewed tomatoes
2 14 oz cans of kidney beans
1 14 oz can of chili beans
2 4 oz cans of green chili peppers
3 tablespoons of chili powder
1 teaspoon of cumin
1 tablespoon of dried oregano
2 teaspoons of salt
1/2 tablespoon of black pepper

Add 2 tablespoons of olive oil to your pan.

Sauté the onions, red bell peppers, and green bell peppers for 3 minutes.

Add the jalapeno pepper, garlic, and celery, and continue sautéing.

Add the Beyond Meat crumbles and cook for 5 minutes.

Add the diced tomatoes, stewed tomatoes, and green chili peppers, mix well, and bring to a light simmer.

Add the kidney beans and chili beans, and mix well.

Season with oregano, cumin, chili powder, salt, and black pepper.

Cover your chili and cook for 45 minutes, stirring occasionally.

After 45 minutes, your chili is ready to serve.
