Vegan Chili

2 vegan sausages (Italian from Field Roast)
1 large chopped onion
3 finely minced cloves of garlic
1 chili seasoning pack (from Simply Organic)
2 large cans of tomatoes
1 can of black beans
1 can of kidney beans
1 can of lentils
1 cup of frozen corn
0.5 cup of water
salt
pepper
vegan sour cream (for serving)
chives (for serving)
tortilla chips (for serving)

Remove casing from 2 vegan sausages and crumble into a nonstick pan.

Add 1 large chopped onion and sauté for 2 to 3 minutes.

Stir in 3 finely minced cloves of garlic.

Add 1 chili seasoning pack and stir until fragrant.

Add 2 large cans of tomatoes, 1 can of black beans, 1 can of kidney beans, 1 can of lentils, and 1 cup of frozen corn.

Add 0.5 cup of water and stir well.

Cover the pot and let it simmer for about 30 minutes (can simmer on low for up to 2 hours).

Add salt and pepper to taste before serving.

Serve with a dollop of vegan sour cream, sprinkle of chives, or crumbled tortilla chips.
