Combine heavy cream and almond milk in a saucepan over medium heat until heated through.
Whisk egg yolks in a bowl until pale and frothy.
Gradually add heated cream mixture to egg yolks, whisking constantly to temper the eggs.
Return mixture to saucepan and cook over low heat, stirring until thickened, about 5-7 minutes.
Remove from heat and stir in vanilla extract, lemon juice, and salt.
Cool the mixture to room temperature, then refrigerate until chilled, about 2 hours.
Churn the chilled mixture in an ice cream maker according to manufacturer's instructions until thick and creamy.
Transfer to a container and fold in chocolate chips or nuts if desired.
Freeze for at least 4 hours until firm.
Scoop and serve, optionally garnished with fruit puree or cocoa powder.
