Traditionally enjoyed as a comforting meal, it has gained popularity worldwide, with various adaptations featuring different proteins and vegetables, reflecting local tastes and ingredients.

Cook 1 pound of jasmine rice by rinsing it three times to remove the starch.
Drain the rice and add it to a saucepan with 2 cups of water; spread the rice well.
Heat over high heat with the lid on; after 8 minutes, the rice should start to boil hard.
Turn to low heat and let the rice continue to cook for 8 more minutes until the liquid is absorbed.
Turn up the heat and let the rice sit for 15 minutes to absorb humidity; fluff the rice using a pair of chopsticks.
Spread a little oil on a tray, pour the rice in, and let it cool for 30 minutes.
Prepare the dipping sauce by mixing 2 Thai chilies, 1 clove of chopped garlic, 1.5 tablespoons of fish sauce, and 1 teaspoon of lime juice in a small bowl; set aside.
Slice 2 spring onions and chop 1/3 ounce of cilantro in two sections.
In a pan over low heat, add 2 tablespoons of vegetable oil and the chopped garlic; let it gently diffuse its scent without browning.
As soon as a good scent rises, add 3 eggs and stir; after 1 minute, you should have a tender omelette that is still a little runny.
Add the cooled rice to the pan, stirring briefly to prevent the eggs from drying out at the bottom.
Add 1/4 teaspoon of ground pepper, 1/4 teaspoon of salt, 1 teaspoon of sugar, and 3 tablespoons of light soy sauce; mix briefly.
Add 2 teaspoons of vegetable oil and stir for 7 minutes until the rice grains are coated in soy sauce and oil, developing a delicious aroma.
Add the crab meat and stir for 2 minutes.
Finally, add the spring onions, briefly stir, and turn off the heat.
