Prepare your equipment: You will need a food processor or a blender for this recipe.

Combine the egg, mustard, vinegar, salt, and sugar in the bowl of your food processor. Pulse a few times to combine.

Slowly add the oil: Turn on the food processor and start adding the oil in a very slow, thin stream until about a quarter of it has been added. This will take about 2 minutes.

Once the mixture starts to thicken and emulsify, you can be a little less strict about adding the oil, but continue to add it slowly.

Once all the oil has been added, scrape down the sides and bottom of the bowl and process for an additional 10 seconds.

Taste and adjust: If the mayonnaise doesn't taste right, add a little more vinegar and salt. Remember that it will thin out a bit after making, but will thicken up after a few hours in the fridge.

Store: Keep in a covered container in the fridge for up to a week.
