1

Gather a quart jar for making mayonnaise.

2

Place 1 whole large egg at room temperature in the bottom of the jar.

3

Add 2 teaspoons of lemon juice and 1.5 teaspoons of apple cider vinegar to the jar.

4

Add 0.25 teaspoon of dry mustard powder, mashing out any lumps.

5

Add 0.5 teaspoon of salt to the mixture.

6

Pour 1 cup of neutral flavored oil (avocado oil) on top of the other ingredients in the jar.

7

Insert the immersion blender into the jar, keeping it at the bottom.

8

Blend for about 20 to 30 seconds until the mixture starts to emulsify.

9

Start moving the immersion blender up and down to continue emulsifying the mayonnaise until thickened, which should take about a minute.

10

If the mayonnaise is too thick, add a little warm water (about a teaspoon) to adjust the consistency.
