Maple Syrup Pie

130 g gluten-free flour blend
2 g xanthum gum
74 g cold butter cubes
30 ml cold vodka
60 ml cold water
2.5 ml sea salt
220 g brown sugar
185 ml 35% cream
185 ml maple syrup
2 eggs
2.5 ml vanilla flavour
pinch of salt

Mix the dry ingredients for the crust.

Cut in the butter.

Slowly mix in the vodka and water to form a ball.

Roll out the dough flat and put it into a greased pie plate.

Cover with foil and add beans for blind baking.

Blind bake at 425 F for 10 minutes.

Whisk together the filling ingredients: brown sugar, cream, maple syrup, eggs, vanilla, and salt.

Pour the filling into the pie crust.

Bake at 350 F for 45 to 50 minutes until the filling is set on the sides but jiggly in the middle.

Let cool at room temperature for 1 hour, then refrigerate for at least 1 hour.
