Cover the pan and cook the lentils with 1 cup of cold water and 1 teaspoon of sea salt at low heat for 10 to 15 minutes until the water is almost absorbed.

Heat olive oil in a pan and fry the onions and 4 smashed garlic cloves over low heat for 15 minutes.

Stir in 1 coffee spoon cumin powder, 1 teaspoon curry powder, 1 coffee spoon nutmeg, ground black pepper, and 1 teaspoon sea salt.

Add the precooked lentils to the frying pan along with 200 ml vegetable broth, and cook covered for 30 minutes over low heat, stirring occasionally.

In a bowl, mix in 1 egg and 1 cup of flour with the cooled mixture.

Assemble the burgers using a circular template, and place them on a piece of baking paper.

Cook in the oven at 230 degrees Celsius (or 200 degrees Celsius in an air fryer) for 20-30 minutes until golden brown and crunchy.
