Prepare the ingredients for Wattalappam, including 30 eggs and 1.5 kg of brown sugar.

In a pot, add 1.7 L of fresh milk and 1 tbsp of cardamom powder.

Add 385 g of condensed milk and 1-2 tsp of salt, mixing until the sugar dissolves.

Bring the milk mixture to a boil, then let it cool slightly before boiling again.

Transfer the pot with the milk to a basin filled with water to cool completely.

Make black sugar syrup by adding 9 tsp of sugar and 1 tsp of water to a pan, heating until dark black, then adding 0.5 cup of water and mixing until no sugar crystals remain.

Crack the 30 eggs into a small bowl one at a time, then mix them in a large bowl until combined.

Add the cooled milk mixture to the eggs and mix until just combined.

Add the black sugar syrup gradually until the desired color is reached.

Strain the mixture into the steaming pan, cover with a lid, and place in a pot with simmering water.

Steam the Wattalappam for 2 hours, adding more water after 1 hour if needed.
