Stuffed Red Chilli Pickle

4 tbsp fennel seeds
2 tbsp fenugreek seeds
2 tbsp cumin seeds
1 tbsp carom seeds
1 tbsp black pepper
1 cup mustard oil
1 tbsp black salt
1 tbsp turmeric powder
2 pinch asafoetida
2 lemons (juice)
2 tbsp oil

Wash the red chilies and dry them in the sun for 2 to 3 hours.

Roast 4 tbsp fennel seeds, 2 tbsp fenugreek seeds, 2 tbsp cumin seeds, 1 tbsp carom seeds, and 1 tbsp black pepper in a pan for 1 to 1.5 minutes.

Let the spices cool and then grind them coarsely.

Add 4 tbsp black mustard and coarsely grind it as well.

Heat 1 cup mustard oil in a pan until it smokes, then turn off the flame and let it cool.

Add 1 tbsp black salt, 1 tbsp turmeric powder, and 2 pinch asafoetida to the cooled oil and mix well.

Juice 2 lemons and add the juice to the spice mixture along with 2 tbsp oil.

Remove the stalk from each chili and make a slit to take out the seeds and pulp.

Fill the chilies with the spice mixture, pressing well to remove excess.

Dip each stuffed chili in oil and place them in a separate bowl.

Sterilize a glass container and fill it with the stuffed chilies, pouring leftover spice and oil over them.

Close the lid and keep the container in sunlight for 3 days or in a cupboard for a good result.
