Preheat the oven to 350°F.
Cut the grass-fed stew beef into beef tips.
Wash the organic carrots without peeling them.
Chop the whole onion and three cloves of garlic.
Heat a cast iron enameled brazer on medium-high heat.
Add 2 tablespoons of avocado oil to coat the bottom of the brazer.
Season the beef with salt, pepper, and thyme, rubbing the seasonings into the meat.
Coat the beef tips lightly with flour.
Place the beef tips in a single layer in the hot brazer to brown them.
Brown the beef until caramelized, flipping once to ensure even cooking.
Add the chopped onions and garlic to the brazer after browning the beef.
Add the braising liquid (not specified in the video) to the brazer with the beef and vegetables.
Cover the brazer and place it in the oven to cook low and slow.
