Soak 4 dried shiitake mushrooms in cool water for at least 4 hours, then slice them.

Cut 100g pork into slivers and marinate with 1/4 tsp salt, 1/4 tsp sugar, a pinch of white pepper, 1/2 tsp soy sauce, and 1/2 tsp liaojiu.

Prepare 60g choy sum by blanching for 30 seconds and setting aside.

Bring 3 liters of water to a boil in a wok, add 230g yee mein, and cook for about 2 minutes until slightly under al dente. Rinse under running water and drain.

Heat 2 tbsp vegetable oil in the wok, add pork slivers, sear for 15 seconds, then fry for another 30 seconds and reserve.

In the same wok, add fresh shiitake mushrooms and fry, then add liaojiu and fry for 2 minutes.

Add dried shiitake mushrooms, fry for another 2 minutes, then add the soaking liquid and season with 1/2 tsp salt, 1/4 tsp sugar, 2 tsp soy sauce, 1/2 tbsp dark soy sauce, and 1 tsp oyster sauce.

Once boiling, add the yee mein and stir gently to absorb the flavors.

Add the reserved pork slivers and mix until the sauce is mostly absorbed.

Add blanched choy sum, 1/8 tsp white pepper, and MSG, mix well, then finish with a drizzle of sesame oil.
