2 tablespoons tomato paste
4 cups water
2 cups heavy cream
1/2 jar sundried tomatoes
1 pound gnocchi
3 cups spinach
1/2 cup grated Parmesan
1 cup shredded Parmesan

Season chicken breast on both sides and rub it down with seasoning.

Heat 3 tablespoons of avocado oil in a pan and sear the chicken for about 4-5 minutes on each side.

Remove the chicken and set aside to shred later.

In the same pan, add 2 tablespoons of butter and the same amount of sundried tomato oil.

Add chopped carrots and celery to the pan and cook for about 5-6 minutes.

Add 1 pound of gnocchi to the mixture and cover with a lid, cooking for 3-4 minutes.
