1 litre soy milk
1 tsp agar agar powder
1 pandan leaf
50g brown sugar
50ml water
15g ginger, sliced

Mix soy milk and agar agar in a pot at room temperature until dissolved as much as possible.

Add pandan leaf and place pot on low medium heat.

Continue to stir for 10-15 mins until it starts to boil and bubble.

Remove from heat and transfer into any bowl or container as preferred.

Remove any small bubbles on the surface and allow to cool for 10 mins before refrigerating for 2-3 hours.

In a small pot, mix brown sugar and water over low heat until dissolved.

Add ginger slices and once bubbling, simmer for around 10 mins stirring frequently.

Set aside and allow to cool to room temperature before combining with the soy milk pudding.
