Add 2 cups of warm water to an electric mixing bowl.
Add 2 and 1/2 tbsp of dry active yeast and 1 tbsp of sugar to the water and whisk well.
Let the mixture sit for about 3 minutes to activate the yeast.
Add 5 cups of all-purpose flour, 1/2 cup of melted butter, and 1 tsp of salt to the bowl.
Mix with the electric mixer for about 3 minutes until a soft dough forms.
Divide the dough into 10 pieces, weighing between 140 grams to 150 grams each.
Stretch each piece of dough and roll it into a ball.
Let the dough balls rise while the oven preheats to 400°F.
Shape each dough ball by creating a hole in the center and rotating it around.
Prepare a pot of hot water with 1/4 cup of baking soda until the water is cloudy.
Dip each bagel into the baking soda water for 30 to 45 seconds each.
Place the bagels onto a cookie tray lined with parchment paper.
Brush the bagels with egg wash.
Top six bagels with jalapenos and shredded cheese.
Bake in the oven at 400°F for 17 minutes.
Remove from the oven and check the texture of the bagels.
