To a bowl add 308 grams of bread flour.

Add 77 grams of whole grain wheat flour.

Add 15 grams of sugar and 10 grams of salt. Mix it with your fingers to distribute everything evenly.

Add 25 grams of olive oil and 225 grams of sourdough starter. This shouldn't be discard.

Add 211 grams of water. Mix until all the flour has been hydrated.

Flour your counter and knead the dough until it's smooth, adding extra flour as needed to have a tacky but not sticky dough.

Put the dough back in the bowl and cover it. Let it ferment around six hours at room temperature until the dough has doubled in size.

After it's doubled, put it in the fridge until you need it. It can stay in the fridge for up to one week.

Once ready to bake, heat your oven to 260 degrees Celsius (500 degrees Fahrenheit) with a baking steel inside.

Divide the dough into eight equally sized pieces.

Shape each piece of dough into a ball, tightening the surface by pushing the dough up into the center and turning it about an eighth each time.

Place all the balls under a dish towel and let them rest for 20 minutes.

Roll out each ball into a very flat round piece of dough, making it as thin as possible without tearing.

Place each disk under a dish towel to prevent drying out.

After about 20 minutes, open the oven and add a pita to the baking steel and close the oven.

Bake for about one and a half minutes. In the last 30 seconds, the pita should puff up. If it doesn't, extend the baking time until it does.

Open the oven and flip over the pita using a spatula. Bake for about one minute more.

Put the pitas on a wire rack until you finish baking.
