Digestive biscuits originated in the UK in the 19th century, initially created for digestive health. They are often enjoyed with tea or coffee and have become a staple in British households. Today, they are loved worldwide, often used as a base for cheesecakes or enjoyed as a simple snack.

Preheat the oven to 180°C (350°F).
In a mixing bowl, combine plain flour, wholemeal flour, bicarbonate of soda, brown sugar, and flaky sea salt.
Cut in cold, cubed butter until the mixture resembles coarse crumbs.
Stir in rolled oats until evenly distributed.
Add milk, honey, and vanilla extract, mixing until a dough forms.
Roll the dough out on a floured surface to about 5mm thick.
Cut into desired shapes using a cookie cutter.
Place the biscuits on a baking sheet lined with parchment paper.
Bake for 12-15 minutes until lightly golden.
Remove from the oven and let cool on a wire rack.
If desired, coat the biscuits in melted chocolate after cooling.
