Spelt flour adds a nutty flavor while being a healthier alternative.
Pulse the coarse oatmeal in a food processor a couple of times until it's slightly broken up but not fine like flour.
In a mixing bowl, combine the pulsed oatmeal, whole meal flour, soft brown sugar, baking powder, and a pinch of salt.
Use a fork to mix the dry ingredients together until well combined.
Add the softened salted butter to the dry mixture and mix until it reaches a loose breadcrumb consistency.
Add 2 tablespoons of fresh milk to the mixture to combine it into a soft dough.
Chill the dough in the fridge for about 15 minutes to make it easier to handle.
Preheat the oven to 180°C (350°F).
Flour the surface and roll out the chilled dough to about 1/4 inch thick.
Use a 3-inch cookie cutter to cut out the digestive biscuits from the rolled dough.
Place the cut biscuits evenly on a baking tray lined with baking paper.
Bake in the preheated oven for about 15 minutes or until golden brown.
Let the biscuits cool slightly on the tray before transferring them to a cooling rack.
