Roast peanuts in a dry skillet over medium heat until fragrant, about 5-7 minutes.

Heat palm oil in a large pot over medium heat until shimmering.
Add chopped onions, garlic, and ginger; sauté until softened, about 5 minutes.
Stir in diced tomatoes and cook until they break down, about 5 minutes.
Add chopped carrots and bell peppers; cook for another 5 minutes.
Pour in vegetable broth and bring to a simmer.
Add guinea fowl pieces and cook until tender, about 25-30 minutes.
Remove guinea fowl, shred the meat, and return to the pot.
Stir in the peanut paste and cayenne pepper; simmer for 10 minutes.
Add spinach and lime juice; cook until spinach wilts, about 2-3 minutes.
Season with salt and black pepper to taste.
