West African Peanut Soup with Guinea Fowl

Cook two onions until translucent and golden.
Grate one thumb of ginger and add to the onions.
Add about 3 ounces of tomato paste to the onions and mix until coated.
Add one large chopped sweet potato to the pot.
Season with salt, black pepper, and cayenne pepper.
Add 6 cups of chicken broth and bring to a boil.
Once boiling, simmer for 20 minutes with the lid on.
Check sweet potatoes for tenderness, ensuring they are fork tender.
Add 1 cup of peanut butter to the mixture and mix until well incorporated.
Add shredded chicken on top and some baby spinach.
Stir until the spinach is wilted and ready to serve.
Serve over cooked jasmine rice, optionally adding crushed peanuts and crushed red pepper.
