Instructions
- 1Prepare the dough by mixing flour, salt, and olive oil in a bowl.

- 3Cover the dough with a damp cloth and let it rest for 30 minutes.
- 4In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- 5Add chopped spinach, mushrooms, carrots, and potatoes to the skillet and cook until softened.
- 6Season the vegetable mixture with cumin, black pepper, and lemon juice; stir in chopped parsley.
- 7Remove the skillet from heat and let the filling cool slightly.
- 8Divide the rested dough into small balls and roll each into a thin circle.
- 9Place a spoonful of the vegetable filling in the center of each circle.
- 10Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
- 11Preheat the oven to 375°F (190°C) if baking, or heat oil in a deep pan for frying.
- 12If baking, place sambousek on a baking sheet and brush with olive oil.
- 13Bake for 20-25 minutes until golden brown, or fry for 3-4 minutes until crispy.
- 14Serve warm with a side of yogurt or tahini sauce.
