Start by making the dough for two 12-inch pizzas.
Add 4 cups of flour to a bowl.
Mix in 2.5 teaspoons of instant yeast directly into the flour.
Mix the flour and yeast for at least 2 minutes.
Add 1 tablespoon of sugar to the mixture to feed the yeast.
After mixing, add 1 tablespoon of salt to season the dough.
Warm 1.5 cups of milk and 1.5 cups of water, ensuring it's not too hot to kill the yeast.
Mix the warm milk and water into the dough using a stand mixer with a dough hook attachment.
If you don't have a stand mixer, you can mix by hand, though it takes longer.
Add 3 tablespoons of oil to the dough after it starts coming together and the bowl is clean.
Knead until the dough is soft and well-formed.
Split the dough in half for two pizzas.
Roll out each half to approximately 12 inches.
Grease a 12-inch cast iron or regular pan with 3 tablespoons of oil.
Place the rolled-out dough into the greased pan.
Cover the dough with foil and let it rise for 1.5 hours until doubled in size.
Add approximately 3 tablespoons of pizza sauce to the dough, spreading it to the edges.
Grate and add approximately 600 grams of cheese on top of the sauce, covering the edges.
Preheat the oven to 425 degrees Fahrenheit.
Sprinkle 2 pinches of Italian spice blend over the cheese.
Add hot pepper jalapeno blend and olives on top of the cheese if desired.
Bake the pizza in the preheated oven at 425 degrees Fahrenheit for approximately 15 minutes.
Compare the finished pizza from the cast iron pan and a regular cake pan for texture.
