Heat oil in a pan over medium low heat.
Add shallots and season with salt and pepper.
Cook shallots until soft.
Add tomato paste and cook for 1 to 2 minutes until fragrant.
De-glaze the pan with vodka and cook off the alcohol for about 60 seconds.
Add crushed tomatoes and bring to a simmer.
Continue cooking for another 5 to 7 minutes until reduced by about a quarter.
Whisk in heavy cream and heat through.
Finish the sauce with parmesan cheese and sugar.
Dredge thinly cut chicken breasts in flour.
Dip chicken in eggs, then coat with breadcrumbs, pressing to adhere.
Fry chicken in a deep fryer at 350°F for 2 to 3 minutes until golden brown and crispy.
Season chicken with salt while still hot.
Assemble the sandwich on Italian bread with chicken and vodka sauce.
Top with mozzarella cheese and place under the broiler until melted.
Add more sauce to the top half of the bread and crown the sandwich.
