Ajvar Relish

Ajvar is a traditional relish from the Balkans, particularly popular in Serbia. It is often made in the fall when peppers are in season and is a staple at family gatherings and celebrations. This versatile condiment can be served with meats, bread, or as part of a mezze platter. Today, ajvar has gained popularity beyond its region, with many variations found worldwide.

40 kg red peppers
3 kg eggplant
1.200 kg oil
220 g salt
250 g sugar
250 ml wine vinegar
10 banana hot peppers

Wash the peppers and eggplant very well.

Roast them and peel them.

Take the seeds out and put them in a strainer. Leave them overnight to drain.

The next day, grind them.

Fry the eggplant first and add 500 ml hot oil to it, frying for 10 minutes.

Start adding the roasted peppers.

Add salt.

After one hour of cooking, add the sugar.

Half an hour before it’s done, add the vinegar.

Cook for three hours with constant stirring to prevent burning.

Sterilize your jars and lids.

Put hot Ajvar into hot jars and twist them tight.
