In a bowl, crack the 2 eggs, season with salt, then beat.

Crack the 3rd egg into the day old rice. Mix until it turns yellow in color.

In a pan, add some oil. Saute the white part of the spring onion until aromatic.

Add the rice. Toss in high heat for a few minutes making sure to break apart any clumps.

Move the rice into one side of the pan and pour the eggs on the other side. Stir them gently until cooked.

Once the eggs are cooked, mix together, season with soy sauce, chicken powder/salt and pepper and continue stir frying for 2 minutes until combined.

Sprinkle with the green part of spring onion and mix.

Serve while hot.
