Chocolate Bark

2 cups dark chocolate chips
1 cup mixed nuts (almonds, walnuts, pecans)
1/2 cup dried cranberries
1/4 cup sea salt
1/2 cup white chocolate chips (optional)

Place a sheet of parchment paper over a larger sheet of tin foil to prevent chocolate from getting on your work surface.

Take a cardboard tube and roll one end of the parchment around it a couple of times.

Pour 100 g of melted chocolate onto the parchment and spread it out thinly and evenly.

Roll up the parchment fairly tightly around the cardboard tube.

Place the rolled parchment tube in the freezer for about 20 minutes to harden.

Once the chocolate has set, take the roll from the freezer and squeeze it lightly to crack the chocolate.

Unroll the paper to release the chocolate bark.

Store the pieces in an airtight container in the fridge for 2 to 3 days or in a freezer for 1 month.
