In a skillet, add 150 g of bacon and cook until it releases its fat and becomes golden but not too crispy.
Add 1 gomo of calabresa and let it fry together with the bacon until it gets some color.
Add 1 medium chopped onion and 3 chopped garlic cloves; cook until the onion is translucent.
Add uva passa and let it hydrate in the fat for about 5 minutes, then turn the heat back on to brown the onion and garlic.
Add 50 g of butter to the skillet and let it melt quickly.
Stir in 1 grated carrot, 1/2 red bell pepper, and 1/2 green bell pepper; sauté for about 2 minutes.
Add olives to taste and stir to combine, letting the flavors meld.
Gradually add 2 cups of farinha de mandioca, stirring constantly until it reaches your desired consistency.
Season with salt to taste, adjusting as necessary due to the saltiness of the bacon and calabresa.
Add chopped cebolinha and salsinha after removing from heat, mixing well before serving.
