German Cabbage and Beef Soup

Add whole allspice berries and bay leaves to a large pot with cold water.
Add quartered onion to the pot.
Add beef chuck or marbled piece of meat to the pot and bring to a light simmer.
Cover the pot and cook the meat until soft and almost falling apart.
Remove the meat from the pot and set aside to cool, reserving the liquid.
Bring the reserved liquid to a simmer while preparing the vegetables.
Cut the potatoes into bite-sized cubes and add them to the pot with the meat broth.
Cut baby carrots into smaller pieces and add them to the pot.
Simmer the carrots and potatoes for about 10-15 minutes until almost tender.
Cut the meat into bite-sized pieces and set aside.
Season the soup with salt and pepper to taste.
Cut the cabbage into bite-sized pieces and add it to the soup, cooking for about 5-10 minutes until wilted.
Add whole caraway seeds to the soup before serving.
