Mohinga

Cultural Context

Mohinga is often considered the national dish of Myanmar, traditionally enjoyed for breakfast. Its rich, flavorful broth made from fish and spices is a comforting staple, often served with rice noodles and garnished with fresh herbs and lime. This dish reflects the diverse culinary influences of the region and is a symbol of Burmese hospitality. Today, Mohinga is enjoyed at any meal and has gained popularity beyond Myanmar, with variations appearing in neighboring countries.

1

Boil noodles. (To avoid noodle sticking together, transfer the boiled noodles to a separate bowl and pour cold water. Allow to cool, and filter noodles separately)

2

Grind dry chillies and fried grams into a powdered mixture.

3

Mix the powder along with noodles.

4

Saute ginger. Remove sauteed gingers and keep it aside.

5

Saute shallots and tomatoes (I prefer to add tomatoes and filter it later. You can skip or avoid adding tomatoes).

6

Add chopped plantain stem along with water and ginger.

7

Let it boil until fully cooked.

8

Add besan (mix besan with water until no lumps and transfer this mixture to the pan. This would avoid the formation of lumps while preparing the soup).

9

Keep stirring until cooked.

10

Add salt and cilantro and let it cook for few more minutes.

11

Transfer the noodle along with the powdered mixture and pour the soup. Garnish with fried onions, garlic and crisps. Serve hot.
