Make rough puff pastry by mixing 250 grams of flour with half of 250 grams of cubed butter and massage together.

Wrap the dough in clean film and refrigerate for 30 minutes.

Chop one onion, mushrooms, shallot, and garlic.

Heat a pan with oil and butter, then add garlic, onion, and shallots, cooking until golden brown.

Season with salt, garlic powder, pepper, and nutmeg, then add chopped mushrooms and fry for 2-3 minutes.

Add 500 grams of spinach and cook for 1 minute, then drain and cool in the fridge.

In a bowl, whisk 2 eggs, then reserve some for egg wash.

Add chopped mozzarella, a tablespoon of ricotta, and parmesan cheese to the egg mixture and mix well.

Combine the cooled spinach mixture with the cheese mixture and season with salt and pepper.

Flour the tray and roll out the rough puff pastry to cover the bottom and sides of the tray, leaving enough for a top.
