Prepare a 9 by 13 loaf pan with baking spray and set aside.

In a large bowl, mix together 2 1/2 cups of flour, 1 1/2 teaspoons of salt, and 2 teaspoons of baking soda. Whisk and set aside.

Mash 3 ripe bananas using a potato masher or fork until nice and mashed.

Add 3 eggs, 1/2 cup of sugar, 1 tablespoon of vanilla, 3/4 cup of canola oil or vegetable oil, and 1/4 cup of water to the mashed bananas. Whisk until combined.

Gently stir the dry ingredients into the wet ingredients until just combined, being careful not to overstir.

Add 1/2 cup of chopped pecans and 1/2 cup of chopped bittersweet chocolate to the batter and stir until mixed.

Transfer the batter into the prepared loaf pan and smooth it out with a spatula.

Bake at 350 degrees for at least 55 minutes, checking for doneness with a skewer.

If the bread is browning too much but not baked through, cover with tinfoil for the last 10 minutes of baking.
