Timorese dishes are typically seasoned with fresh herbs and spices, creating vibrant flavors. Today, Timorese cuisine is gaining recognition internationally, celebrated for its unique flavors and ingredients.

Prepare the caramel by heating 250 g of sugar until it turns brown, then add a little bit of water.
Pour the caramel into the cake mold and place it in the fridge to set.
In a mixing bowl, combine 6 eggs, 300 mL of milk, and 2 tablespoons of coffee, mixing slowly until smooth.
Pour the mixture into a cake mold and steam for 40 to 45 minutes.
Prepare the vegetables by washing all the ingredients.
Clean the banana flower by removing the outer layers.
Steam the breadfruit in hot water for 5 minutes, then remove and cool in cold water.
Steam the spinach and banana flowers for 5 minutes, then cool in cold water.
Squeeze out excess water from the steamed vegetables, including baby papaya and banana flower.
Mix together the peanuts, baby papaya, and banana flower, adding olive oil and salt to taste.
Prepare garlic and shallots by chopping them and mixing them together in a bowl.
Peel the breadfruit, cut it into pieces, and prepare it for steaming.
Smash garlic, ginger, turmeric, and lemongrass together to create a paste.
In a pan, heat olive oil, add the breadfruit, and mix in the smashed ingredients, adding a little water and salt to taste.
Cook the mixture for 25 minutes while stirring occasionally.
Stir-fry the rabar Raba with garlic and olive oil until cooked through.
Plate the rabar Raba and garnish with basil or parsley as desired.
Plate the Tim coffee pudding and garnish with lemon.
