Add sugar and mix until well combined and fluffy.
Incorporate eggs one at a time, mixing well after each addition.
Stir in vanilla extract, lemon juice, and salt until smooth.
Fold in sour cream gently to maintain the mixture's lightness.
Pour the cream cheese mixture over the crust in the springform pan.
Bake in the preheated oven for 50-60 minutes until the center is set but slightly jiggly.
Turn off the oven and let the cake cool inside for 1 hour to prevent cracking.
Remove the cake from the oven and let it cool completely at room temperature.
Chill in the refrigerator for at least 4 hours or overnight before serving.
Top with whipped cream and fresh fruit before serving.
