Cut and add fruit into a large bowl.

For the Sambal Rujak, add the sugar and ½ cup water to a saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes to make a simple syrup.

Stir in the remaining ingredients (water, lime juice, roasted shrimp, whole peppers, and salt).

Bring to a boil, then reduce heat and simmer for 5 more minutes. Remove from heat and cool.

Strain, then pour over the fruit. Toss the fruit to cover it in the sauce.
