25 g all-purpose flour
1 egg
few tbsp water

Prepare the dough by mixing 450 g all-purpose flour, 1 large pinch of salt, and 170 g frozen butter until crumbly.

Add 115-20 ml cold water and 1.5 tsp distilled white vinegar gradually, knead until smooth; let it rest.

Cook the meat filling by sautéing 1 large onion (or 2 small ones), 2-3 garlic cloves, and 2 chilis until soft.

Add 500 g minced beef, 2 tsp ground coriander, 1 tbsp paprika, 1 tsp cumin, and 100 g peas; cook until browned.

Roll out the dough and cut into circles.

Place filling in the center of each circle, fold, and seal the edges.

Prepare the cheese filling by mixing 100 g white cheddar, 100 g mozzarella cheese, 1 clove of garlic, 1 tsp dry oregano, and black pepper.

Assemble the empanadas with either meat or cheese filling, using 25 g all-purpose flour for dusting.

Brush with egg wash made from 1 egg and a few tbsp water before baking or frying.
