Drop the potatoes in a pan with cold water and set on high heat to boil for around 25 minutes until completely soft.

Place the dough in the fridge for cold fermentation for 18 to 24 hours, or let it bulk ferment at room temperature for around 2 hours with a fold halfway through.

For final shaping, drop the dough on a floured table smooth side down, flatten it, shape it into a chunky triangle, and roll it up.

Place the shaped dough in the prepared baking tin seam side down, cover it, and leave it to proof for 1 to 3 hours until doubled in size.

Preheat the oven to 170°C (340°F) fan on or 190°C (375°F) fan off.

Slide the lid onto the baking tin and place it in the oven.
