Poached Eggs on Toast and Spinach

Poached eggs on toast, often enjoyed with spinach, is a classic American breakfast that highlights simplicity and freshness. This dish is celebrated for its nutritious ingredients and can be found in many brunch menus across the country. Variations abound, with some adding hollandaise sauce or different greens, making it a versatile option for any meal.

Frozen spinach is often cheaper and just as nutritious.
Take 2 slices of sourdough bread.
Slice half an avocado.
In a small saucepan, bring water to a boil.
While waiting for the water to boil, toast the bread with some olive oil until it has a nice color on both sides.
Once toasted, place the bread on a plate.
In the same pan, add 1 teaspoon of butter and then add the baby spinach.
Season the spinach with salt and black pepper, and toss it for a couple of seconds until cooked.
Take the spinach and place it on top of the toasted bread.
Add 2 tablespoons of vinegar to the boiling water, then reduce the heat and create a whirlpool with a spoon.
Crack each egg into a small bowl and gently slide it into the simmering water.
Cook the egg in the simmering water for 1.5 minutes for a runny yolk, or longer if you prefer it more cooked.
After 1.5 minutes, remove the egg using a j cloth or towel to drain excess water.
Place the poached egg gently on top of the spinach on the toasted bread.
Add sliced avocado on the side.
Season with salt, black pepper, and drizzle with olive oil.
