1 cup cooked rice
3 teaspoons ghee
1/2 lemon

Take a pressure cooker and rinse the turkey lentils 2-3 times until clean.

Soak the lentils for 2 hours (or 1 hour if preferred), then rinse again.

Add 1.5 cups of water, 1 teaspoon of ghee, a pinch of turmeric powder, and salt to taste to the lentils in the pressure cooker.

Cover the cooker and place a tissue paper on top to prevent damage to the lid.

Cook for 3-4 whistles and check if the lentils are cooked.

In a separate pan, heat 2 tablespoons of oil until hot.

Add 1 teaspoon of cumin seeds, 2 dried red chilies, and curry leaves to the hot oil.

Add 3 tablespoons of finely chopped green chili and 2 tablespoons of finely chopped ginger, sauté on high flame until golden.

Add 2 tablespoons of finely chopped onion and cook until golden brown.

Once the onions are golden, add 1 large finely chopped tomato and cook until soft.

Add salt to taste, a pinch of red chili powder, and 1 teaspoon of coriander cumin powder.

Cook the mixture until the tomato is well cooked and soft.

Add the boiled lentils to the pan and mix well with the spices, without adding water initially.

Once mixed, add a little water (about 1 cup) and keep cooking on low flame.

Add 1.5 cups of cooked rice to the lentil mixture and stir well.

Add 3 teaspoons of ghee and finely chopped cilantro, and squeeze in the juice of half a lemon.

Mix everything well and serve.
