Agar-agar is a plant-based gelling agent that can be used instead of pectin.

Honey adds sweetness with a different flavor profile.
Start by mixing 1.5 cups sugar and 0.5 cups water in a medium heat pot until the sugar begins to melt.
Add 0.5 teaspoons lemon juice to the sugar-water mixture to prevent crystallization.
Cook the mixture until it thickens and forms a single thread when tested between fingers.
In a separate pan, add 0.5 cups water and 2-3 tablespoons cornflour, mixing well over medium heat.
Keep the heat low to avoid the cornflour mixture becoming too thick too quickly.
Stir continuously to ensure even cooking and to prevent lumps.
Cook for about 5-7 minutes until the cornflour mixture is thick and smooth.
Gradually add the sugar syrup to the cornflour mixture in small portions, mixing well after each addition.
Increase the heat slightly while mixing to ensure the syrup combines well with the cornflour mixture.
Cook until the mixture thickens to a jelly-like consistency, about 5 minutes.
Add 1/2 teaspoons ghee or butter to the mixture and mix until fully incorporated.
Divide the mixture into separate bowls for coloring.
Add red food color and strawberry essence to one bowl, mixing well.
In another bowl, add vanilla essence and green food color, mixing until desired color is achieved.
In a third bowl, add yellow food color and vanilla essence, mixing well.
Pour the colored mixtures into separate molds or bowls and refrigerate for 2 hours to set.
After 2 hours, check the jelly; it should be firm and ready to cut into cubes.
