Prepare Haitian green seasoning (epis) by blending scallions, onion, parsley, thyme, scotch bonnet pepper, celery, garlic, yellow bell pepper, and green bell pepper with 2 tablespoons of lime juice, 4 tablespoons of water, and 1 teaspoon of chicken bouillon.

Marinate fish with 2 tablespoons of epis and Adobo seasoning, adding chopped onion, bell peppers, parsley, thyme, and scotch bonnet pepper on top before refrigerating.

Clean 2 cups of djon djon mushrooms, rinsing them under water and soaking in 2 cups of boiling water for 10 minutes.
