Break 2 pieces of matzo into a bowl.
Soak the matzo in warm water for about 30 seconds until softened.
Crack 2 eggs into the bowl with the matzo and mix together.
Add kosher salt to the egg and matzo mixture and mix well.
Heat canola oil in a nonstick skillet over high heat until hot.
Pour the matzo mixture into the skillet, spreading it out to form a circle.
Cook until the edges start to get crispy and the mixture holds together, about 3-4 minutes.
Flip the matzo brei carefully, cooking the other side for a few minutes until browned.
Cut the matzo brei into wedges and serve with a dollop of strawberry jam.
