In a large mixing bowl, sift together 24 grams of granulated monk fruit sweetener.
Add 8 grams of egg white protein powder, 28 grams of coconut flour, and 25 grams of whey protein powder to the bowl.
Sift these dry ingredients together until fully combined and there are no lumps.
Add 32 grams of peanut butter to the mixture.
Add 20 grams of keto syrup and one teaspoon of vanilla extract.
Add 45 grams of room temperature water and stir until fully combined, forming a smooth sticky dough.
Scrape down the sides of the bowl and form the dough into a ball, massaging it in your hands to ensure it holds its shape.
If the dough is too sticky, add a very small amount of coconut flour until it releases from your fingers.
Divide the dough into two portions; set one aside.
To the other portion, add 3 grams of cocoa powder, 4 grams of granulated sweetener, and half a teaspoon of vanilla extract.
Mix the chocolate portion until fully combined and form both portions into smooth balls.
Place the balls in the refrigerator to chill for at least 30 minutes.
Preheat the oven to 350°F and line a large baking sheet with parchment paper.
Scoop out the dough in portions of 1/4 to 1/2 teaspoon and place them on the baking sheet, leaving space between each piece.
Roll each scoop into tight smooth balls, ensuring no cracks are present.
Bake in the preheated oven for about 8 minutes or until firm and beginning to dry.
Remove from the oven and allow to cool on the pan for at least 30 minutes until completely cooled and solid.
For the best texture, let the cereal dry out overnight.
