Steamed Corn with Coconut Meat

Steamed Corn with Coconut Meat is a popular snack in Cambodia, often enjoyed during the rainy season when corn is plentiful. The dish highlights the natural sweetness of fresh corn complemented by the rich, creamy texture of coconut. It is a simple yet satisfying treat that reflects the country's agricultural bounty. Today, variations can be found across Southeast Asia, where corn and coconut are staples in many culinary traditions.

Shredded coconut can provide similar texture at a lower cost.

Evaporated milk is often less expensive and can mimic creaminess.
Shuck the corn and remove the husk.
Peel the corn.
Blend the peeled corn until 60 to 80% smooth.
Add 4 Tbsp corn starch (or tapioca starch) and 4 Tbsp coconut milk to the blender.
Blend again to combine.
Pour the mixture into small bowls, filling them 80% full.
Boil a pot of water for steaming.
Once the water is boiling, place the steaming basket on top.
Wrap the lid with muslin to prevent water from dripping onto the corn.
Steam for about 20 to 30 minutes.
While waiting, grind the roasted sesame seeds coarsely.
In a bowl, mix the ground sesame seeds with 2 Tbsp sugar and 1/2 tsp salt.
After 25 minutes, check if the corn is well-cooked.
Serve the steamed corn hot or cold, adding coconut meat on top.
Sprinkle the sesame seeds and sugar topping over the corn.
