Steamed Corn and Clams

1/4 pound slab of bacon, diced
3 garlic cloves, peeled and sliced
25 little neck clams
3 ears of corn, shucked, trimmed and halved
3/4 cup white wine
1/2 tbsp smoked paprika
crushed red pepper flakes (to taste)
5-6 basil leaves
1/4 cup olive oil

In a large pot over medium heat, cook the bacon, then add the garlic.

Add the clams, corn and wine, then sprinkle with paprika.

Increase the heat for about 30 seconds until the alcohol evaporates, then return to medium.

Cover the pot and steam until the clams open and the corn is tender (8-10min) - discard unopened clams.

Serve clams & corn with broth in bowls, with a sprinkle of pepper flakes, a drizzle of olive oil and torn basil leaves.
